Yoghurt and granola parfaits
Yoghurt parfaits are one of our favourite light meals, offering plenty of versatility. Parfaits can be crafted with all of your go-to ingredients in just seconds. A classic parfait can be put in a glass cup, mason jar, or to-go container for easy storage and consumption.
Ingredients:
- Yoghurt of choice
- Fruits or berries (strawberries, peaches, blueberries, etc.)
- Natural sweeteners such as honey
- Oats or granola
- Nuts and seeds
- Spices such as vanilla
Layer to preference alternating your ingredients to create a high protein and high dietary fibre meal that can easily be taken to work or on the go.
Yoghurt banana splits
Eating healthy has never looked so good, especially when it practically looks like a tasty dessert. Imagine you’re making an ice cream banana split, but simply swap out the ice cream for yoghurt and chocolate syrup and cherries for healthy granola, fresh fruits, and other toppings of your choice. The possibilities are endless.
Ingredients:
- Bananas cut in half
- ½ cup greek yoghurt
- Almond slices
- Granola
- Dried coconut
- Fruit of choice
- Chocolate chips
Throw these items into your blender and you’re good to go. For a little extra texture, add frozen berries.
Yoghurt granola bars
Yoghurt granola bars are a convenient on-the-go snack, after-gym treat, or nighttime dessert. They can be made with any of your favourite fruits, so substitute as you wish. Delicious and nutritious, these yummy granola bars are sure to become a favourite for your busy lifestyle.
Bar Ingredients:
- 2 cups rolled oats
- 1 ½ cups brown rice krispies
- ¼ cup unsweetened coconut
- ¼ cup roasted almonds, chopped
- 1 tablespoon chia seeds
- ¼ teaspoon salt
- ½ cup peanut butter
- ½ cup honey
- 1 ½ teaspoon vanilla
- 1 cup fruit of choice (dried blueberries, strawberries, etc.)
Yoghurt Coating:
- 1 tablespoon water
- 1 teaspoon vanilla
- ½ teaspoon gelatin
- ¼ cup greek yoghurt
- 1 tablespoon honey
- 2 cups powdered sugar
- Pinch of salt
Instructions:
Start by lining a pan with non-stick paper. In a large bowl, mix together the oats, rice krispies, coconut, almonds, chia seeds and salt. In a separate bowl, microwave the almond butter and honey for 30 seconds to 1 minute or until the mixture is hot and pourable. Add in the vanilla and mix again.
Combine the honey mixture with the dry oat mixture and mix until everything is moist. Once your dry and wet ingredients are combined, gently stir in your fruit of choice. Press this mixture into the prepared pan using the back of a measuring cup or spoon to press the mixture into the pan until it is tightly packed. Cover the container and place it in the freezer for 1-2 hours. Cut into 9-12 bars and return to the freezer.
To make the yoghurt coating, start by combining water and vanilla in a small bowl. Sprinkle the gelatin over the top and whisk with a fork until the gelatin is evenly distributed. Set aside for about 5 minutes, or until it sets into a thick paste. In another small bowl, whisk together the yoghurt, honey, and salt. Microwave for 15 seconds at a time, stirring in between until the yoghurt becomes liquidy and very warm to the touch. Just make sure you don’t let the mixture start to boil or your yoghurt will curdle. Next, whisk the settled gelatin into the warm yoghurt mixture, whisking until the gelatin is completely dissolved. Scrape the yoghurt mixture into a medium mixing bowl. Pour the powdered sugar on top. Use a mixer or whisk until the yoghurt and powdered sugar combine into a thick, but pourable, coating.
Working with one frozen bar at a time, dip the bottom of the bar into the yoghurt and allow any excess to drip off. Flip the bars over so the yoghurt-coated side faces up and place them on the prepared baking sheet. Repeat with the remaining bars and let sit uncovered overnight or up to two days until they are dry. Flip over and repeat to coat the other side. Enjoy!
